1 1/2 Pounds Chicken
1 large onion -- Diced
1 large Garlic clove -- Dice Fined
1/2 Cup Carrots -- Dice Fined
1 Strip Bacon -- Cut in small cubes
1/2 Cup Grand Marnier - Liqueur
1 Can Cream Of Broccoli Soup
1/2 Cup White Wine
Pepper
Salt
4 Pepper Corns
1 Large Bay Leaf
Olive Oil
Dash Hot Sauce
Remove skin of chicken, debone and cut chicken into large chunks. Chicken breast and thighs work the best for this.
Fry Bacon until almost crisp. Add onion and olive oil if needed. Saute until onion is tender. Add
Garlic and sauté another 2 minutes. Add Carrots and sauté an additional 5 minutes adding olive oil as needed. Add chicken chunks, turn heat to high and simmer 5 minutes. Add
Broccoli soup, Grand Marnier, wine, salt, pepper, bay leaf, hot sauce and pepper corns. Stir to mix all
ingredients. Turn down heat to simmer and cook stirring every 15 minutes for 1 hour. Adjust seasoning and serve over
noodles or rice.
