Serving Size : 4 Preparation Time :0:30 Categories : Pasta Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup Fresh Basil -- Snipped 1 medium Red or green pepper -- Cut up 1/2 cup Mayonnaise 2 tablespoons Parmesan cheese -- Grated 1 tablespoon Lemon juice 1/8 teaspoon Red pepper -- Ground 8 ounces Fettucine or linguine 2 large Carrot -- Cut into thin wedges 1 medium Zucchini or yellow squash -- Cut into thin strips 10 ounces Cooked chicken or turkey breast -- Cut into strips FOR SAUCE: Place basil, red or green pepper, mayonnaise, Parmesan cheese, lemon juice, 1/2 teaspoon salt, red pepper and 1/8 teaspoon black pepper into a blender or food processor. Cover and blend till pureed. Set aside. FOR PASTA: Cook pasta for 6 minutes in a large amount of boiling water with salt added. Add carrots and onion. Return to boiling and cook for 2 minutes. Add zucchini or yellow squash. Return to boiling and cook for 2 more minutes. Drain pasta and vegetables; return to sauce pan. Stir in sauce. Add chicken or turkey; toss well to combine. Cook over very low heat for 2 minutes or until heated through, tossing occasionally. Serve immediately. |
