Stuffed Beef Log

Amount, Measure, Ingredient -- Preparation Method

2 pounds                   Ground Beef
1/2 cup                     Quick-cooking oats
1/2 cup                     Onion -- finely chopped
1/2 cup                     Milk
1 whole                     Egg -- beaten
2 teaspoons              Salt
                                   Pepper

Amount, Measure, Ingredient -- Preparation Method

1/2 pound                Mild sausage
1 medium                 Potato -- peeled and grated
1 cup                         Bread crumbs
1 whole                     Egg -- beaten
1/4 cup                     Onion -- finely chopped
1/2 teaspoon            Salt

Combine ground beef, oatmeal, 1/2 cup onion, milk, 1 beaten egg, 2 tsp of salt and pepper to taste. Mix well. Shape into 10 x 16 inch rectangle on waxed paper.

Combine sausage, potato, bread crumb, 1 beaten egg, 1/4 cup onion and 1/2 tsp salt. Mix well.

Spread sausage mixture evenly over beef mixture. Roll jelly roll fashion beginning at short end, lift wax paper to help roll.

Place seem side down on shallow baking pan and bake at 300 degrees for 1 1/2 hours.
